Spinach and Arborio Rice Soup

Ingredients

    1 1/2 lbs fresh spinach, washed
    3 tbsp extra virgin olive oil
    1 small onion,finely chopped
    3 cloves garlic, finely chopped
    1 tsp red pepper flakes
    generous 1/2 cup arborio rice
    5 cups vegetable broth
    salt and pepper
    4 tbsp Pecorino cheese (Parmesan cheese also ok), grated

Directions

Spinach in pan with just water still on leaves from washing. Add pinch of salt. Heat gently until wilted, drain and save drained liquid. Chop finely.
Heat oil in large sauce pan, add onion, garlic and red pepper flakes 4-5 minutes. Stir in rice to coat, then add broth and spinach liquid.
Bring to boil, lower heat and simmer 10 minutes.
Add spinach and cook 5-7 minutes, until rice tender.
Season with salt and pepper, and serve with grated cheese.

  • I am going to try this as just a rice with the spinach and cheese.Will only use enough stock to cook the rice.I am not sure about the cooking time as this type of rice usually cooks for 30-35 minutes.Guess I will see. - 2/8/10
