1 1/2 lbs fresh spinach, washed
3 tbsp extra virgin olive oil
1 small onion,finely chopped
3 cloves garlic, finely chopped
1 tsp red pepper flakes
generous 1/2 cup arborio rice
5 cups vegetable broth
salt and pepper
4 tbsp Pecorino cheese (Parmesan cheese also ok), grated
Heat oil in large sauce pan, add onion, garlic and red pepper flakes 4-5 minutes. Stir in rice to coat, then add broth and spinach liquid.
Bring to boil, lower heat and simmer 10 minutes.
Add spinach and cook 5-7 minutes, until rice tender.
Season with salt and pepper, and serve with grated cheese.
