Scandinavian Walnut Cake

Introduction

This is a healthier version of a cake I used to make. I used whole wheat flour in place of white, and I used Splenda Sugar Blend for Baking in place of 2 cups of sugar. Number of Servings: 12

Ingredients

    2 cups whole wheat flour
    1 cup Splenda Sugar Blend for Baking
    2 large eggs
    1 teaspoon baking soda
    1/2 cup chopped walnuts
    1 can (20 oz) crushed pineapple with juice (do not drain)

Directions

Makes 12 pieces

Combine all ingredients. Mix well. Pour into a 9 X 13 inch greased and floured pan. Bake at 350 degrees for 35 to 45 minutes. (Until a toothpick inserted in the center comes out clean.)

Can be topped with cream cheese frosting and walnuts.
