Raisin bran muffins

Ingredients

1.5 cups Wheat bran
1 cup Milk, nonfat
1 tbsp Lemon Juice
1 Egg, fresh
1/2 cup Brown Sugar
1 tbsp Vanilla Extract, 1 tbsp
3 tbsp Canola Oil
1/2 cup Apple Sauce
1 cup Whole Wheat Flour
1.5 tsp baking powder
1.5 tsp baking soda
1/2 tsp salt
3/4 cup raisins
Directions
1. Mix bran, milk and lemon juice and set aside.
2. Beat egg, add oil, apple juice, brown sugar and vanilla and combine.
3. Mix bran mixture and egg mixture together.
4. Add flour mixed with baking soda, baking powder and salt. Stir until just combined.
5. Stir in raisins.
6. Bake at 350 for 15-20 minutes
Makes 16 muffins.
