Ingredients

1 cup white flour
1 cup whole wheat flour
1/2 cup sugar
1/2 cup packed brown sugar
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
2 tsp ground cinnamon
1/4 cup vegetable oil
1/2 cup unsweetened applesauce
1/2 cup pumpkin puree
1 egg
2 egg whites
1 tbsp vanilla extract
2 cups grated carrots
1 apple, peeled, cored and chopped
1 cup raisins
1/4 cup chopped walnuts
Directions
Recipe yields 18 muffins
Preheat oven to 375 degrees.
Whisk together egg, egg whites, oil, vanilla extract, applesauce and pumpkin puree. Add raisins to plump.
Combine flours, sugars, baking powder, baking soda, salt and cinnamon. Add carrots, chopped apple and walnuts.
Stir liquids into the flour mixture and mix until moist.
Spoon into greased muffin pans to 3/4 full.
Bake for 15 minutes or until tops are golden brown.
