Olive, Chickpea and Tomato Tapenade



Introduction

Based upon PHATLIRPA's recipe of the same name. Changed with 1/2 black and green olives to make more color, deleted water. Refigured mainly for serving size. Number of Servings: 10

Ingredients

    1 can (15 oz) chick peas, drained & rinsed
    1/2 can (3 oz) green large pitted olives, drained & rinsed
    1/2 can (3 oz) black large pitted olives, drained & rinsed
    1/2 can diced tomatoes (no salt)
    1 tsp garlic powder
    1 tsp parsley
    1 tsp paprika
    1 tbsp extra virgin olive oil

Directions

In a food processor, chop olives and chickpeas until coarse - slowly adding in the olive oil until thoroughly blended. In a bowl, mix olives, chickpeas, tomatoes and seasonings. Refrigerate.

Makes a fresh "salsa" taste - if you want it hotter, consider adding a tsp of hot sauce or 1 tsp of chili powder.

Makes 10: 1/4 cup servings
