Slow Cooker Chicken Chili

Introduction

One day I had a hankering for chili but have only made it once in my life and followed my sister's recipe to the letter. Well I didn't have half the ingredients I was supposed to have, so I just kind of threw some stuff in.

I thought it was good, my husband thought it was too watery because he likes his chili thicker. Next time I might drain the can of diced tomatoes. Probably next time I would use all chicken breast too, I just didnt have enough chicken breast at the time.

Number of Servings: 8

Ingredients

    3 large chicken breast
    1/3 pound boneless skinless chicken thighs
    1 large can Hunt's Diced Tomatoes with Basil Garlic and Oregano
    2 cans Hunt's Seasoned Dice Tomatoes for Chili
    1 Can Bush's Chili Beans
    1 Tbls Chili Powder
    1 tsp Garlic Powder

Directions

In a medium to large slow cooker (My crockpot is a 6 quart crockpot and it filled it halfway) combine all ingredients. Season with garlic powder and chili powder to taste. I used frozen chicken so I cooked mine on low for 3 hours, then switched to high for 2 hours. After about five hours, cut up the chicken (either dice or shred) stir and cook for another hour or so. Cooking times on a crockpot will vary.

Makes about 8 one cup servings.

I plan on topping mine with sour cream and cheese, but they are not included in the nutrition analysis.
