Friendship Cake (Brandied Fruit Cake)

Introduction

Brandied Fruit Cake - brandied fruit jar must be maintained. Starter consists of 1 cup crushed pineapple, drained; 1 cup canned peaches (chopped), drained; 1 cup marachino cherries (halved), drained; 1 cup peach brandy; 1 cup sugar.
Every two weeks 1 cup of drained fruit and 1 cup of sugar must be added and stir well. Always add in order of peaches, pineapple and cherries. No metal utensils. Must be kept in a non-sealed glass container located in a warm non-drafty location, using only wooden spoons or plastic spoons to stir. Starters may be taken from this jar after jar one time reaches 3 cups of fruit. Remove starter just before adding fruit and sugar.

Ingredients

    1 1/2 cups of Wesson Oil
    2 cups sugar
    3 eggs, beaten
    1 teaspoon soda
    3 1/2 cups self-rising flour
    2 cups nuts, chopped (pecans or English walnuts)
    3 cups brandied fruit, drained (see notes in Description)
    2 tablespoons vanilla

    Combine oil and sugar, blend in eggs. Add dry ingredients gradually. Fold in nuts and fruit. Add vanilla flavoring. Batter will be very stiff. Bake in gr eased and floured tube pan at 350 degrees for one hour and 15 minutes.

Directions

Bake in a tube pan. Makes 16 servings.
