Lemon Chicken

Introduction

Really tasty (makes you think of summer) and if you start marinating early, the chicken is very tender! Really tasty (makes you think of summer) and if you start marinating early, the chicken is very tender!
Number of Servings: 4

Ingredients

    1 full chicken breast (about 1 lb)
    about 1/2 cup Extra Virgin olive Oil (most will be left in the bag after marinating)
    Zest of 1 lemon
    Juice from 2 lemons (place 2 halves in marinating bag after squeezing)
    Dash of salt (optional)
    Dash of fresh ground pepper
    1 1/2 tsp chopped garlic

Directions

Place all ingrediants in a freezer bag, getting most of the air out. Kind of smash around to make sure all mixes up and gets rubbed into chicken. Place in refrigerator for at least 1 hour, but can be done up to 8 hours ahead (due to acidity of lemon, chicken may look a little strange, but will cook up OK). Cut chicken into strips (optional) and grill until done.
Makes 4, 4oz servings.
