Warm Bean Chili (Vegan or Carnivorous)

Submitted by: TX_3XDAD

Introduction

Cheap, filling, tasty, quick and infinitely malleable. Add a pound of meat, fish, or tofu of your choice (venison's my fave) to really round this out. Ingredients

1 lb. dried Mayacoba (yellow, or Peruvian) beans
    1 large onion, chopped
1+ bulbs of garlic, smashed then minced
5-8 serrano peppers, sliced into rounds, WITH seeds
2T ground cumin (ground fresh from seed is great!)
    1/4C olive oil
OPTIONAL: 1lb ground meat (I prefer ground venison), chopped fish (I prefer salmon), or tofu

Directions

NOTE: This recipe can have meat or fish added to it, but they're not figured into the calorie calculations.

1. Soak the mayacoba beans overnight. Change the water twice for best effect.
2. Chop the onion, smash the garlic and mince it finely.
3. Pour the olive oil into an 8qt. pot and heat.
4. Add the garlic, onion and ground cumin. Fry it up until everything's yummy and melted.
5. Add the beans and mix them well with the onions.
6. Add 6C water, bring to a boil.
7. When the water boils, add the Serrano pepper rounds.
7a. If you're adding protein, now's the time. It can be added frozen or fresh -- it'll all cook by the time it's done. Bring back to a boil.
8. Let boil for 25 minutes, then throttle back to a simmer for another 40 minutes.

If it's too "soupy" then take the lid off and let it thicken up. Too thin? Add water or low-sodium vegetable or chicken broth.
