Impossibly Easy Lasagna Pie

Ingredients

1 lb ground beef, lean
1 small onion, chopped
1 c cottage cheese
1/4 c Parmesan cheese
2 c shredded mozzarella cheese, divided
3/4 tsp Italian seasoning
1 6 oz can tomato paste
1/2 c Bisquik
1 c milk
1/4 tsp salt
1/4 tsp pepper
2 eggs
chopped fresh parsley
Directions
Heat oven to 400 degrees. Grease 9-inch deep-dish pie plate. Cook beef and onion until brown, drain grease. Layer cottage cheese and Parmesan cheese in the bottom of the pie plate.
Mix together beef, 1 c mozzarella, Italian seasoning and tomato paste. Spoon evenly over cheese in pie plate. Mix Bisquik, milk, salt, pepper and eggs until blended. Pour over ground beef mixture in pie plate.
Bake 30-35 minutes or until knife/toothpick comes out clean. Sprinkle remaining mozzarella over top. Bake 2-5 minutes longer or until cheese is melted and bubbly. Sprinkle with parsley. Cool 5-10 minutes to set. Cut like a pizza or pie to make 8 servings.
