CLEAN EATING'S THE RICARDO

Introduction

Ingredients

    2 Ezekiel corn tortillas
    2 Tbsp fat free refried beans
    4 Tbsp shredded reduced fat cheddar cheese
    4 slices turkey deli slices, nitrate free
    1/2 avocado, sliced into 6 pieces
    4 eggs
    2 Tbsp pico de gallo

Directions

Start poaching pan with water and set on medium high heat to boil water.

Spread 1 Tbsp of beans onto each tortilla and sprinkle with 2 Tbsp of cheese, each. Microwave for 20 seconds. Lay 2 turkey slices onto each tortilla.

Poach eggs. Place 2 eggs on top of the tortilla. Layer with 3 avocado slices each and pico de gallo.

SERVE AND DEVOUR!
