Blueberry Muffins (Nick Malgieri)

Introduction

This recipe is from the book, "How to Bake" by Nick Malgieri. These muffins are absolutely fantastic, although definitely not a "diet" food. Number of Servings: 12

Ingredients

    8 TB (1 stick) unsalted butter, softened
    1.25 cups sugar
    .5 tsp salt
    2 large eggs
    2 cups AP flour
    2 tsp baking powder
    .5 cup buttermilk
    2 cups frozen blueberries, unsweetened

Directions

1. Set rack at middle level in oven, and preheat to 375 degrees.

2. Use an electric mixer to cream the butter, sugar, and salt together until light and fluffy. Beat in the eggs, one at a time, until smooth. Mix the flour and baking soda together in a separate bowl, then alternate stirring small amounts of this mixture and the buttermilk into the batter, until first 7 ingredients are fully combined.

3. Crush a quarter of the berries and stir into the batter; fold in the remaining whole berries.

4. Spoon batter into 12-cavity muffin pan with paper liners. (*Optional: Sprinkle tops of muffins with extra sugar)

5. Bake the muffins for about 30 minutes, until well risen and deep gold on top. Remove from oven and cool in pan.
