Carrot, Molasses, and Apple Muffins

Introduction

Ingredients

    1 c ap flour
    1 c whole wheat flour
    1 tbs baking powder
    .25 tsp ground nutmeg
    .25 tsp ground cinnamon
    1 medium to large carrot
    .5 cup raisins
    2 large eggs
    1 c. apple cider
    2/3 c. unsulphured blackstrap molasses
    1 c. vegetable (or other light flavored) oil

Directions

yields 18 standard muffins

*Preheat the oven to 400F
*Put the raisins in a small bowl and pour half a cup of cider over them to plump them a bit; set aside
*Combine the dry ingredients
* Peel and dice the carrot and add to the raisins
* In a separate bowl, beat the eggs then combine the rest of the wet ingredients (including the raisins and carrots)
* Fold the wet into the dry with as few strokes as possible (overworking the batter will result in tough muffins)
* Drop a spoonful or so of batter into the muffin tins and bake for 8-10 minutes or until done
