Easy Chicken Penne Bake

A one-pot-wonder - it doesn't get much easier than this. This is great for when you'd rather spend the time after work working out, rather than cooking. Some days are busy like that. A one-pot-wonder - it doesn't get much easier than this. This is great for when you'd rather spend the time after work working out, rather than cooking. Some days are busy like that.
Number of Servings: 6

Ingredients

    One box Active Lifestyle Multigrain Penne Pasta (14.5 oz)
    One jar Ragu Light No-Sugar Added Tomato and Basil sauce (26 oz)
    26 oz water (fill the jar after you empty the spaghetti sauce out of it)
    One large (12 oz) chicken breast
    1 t. Salt
    1 T. Olive oil
    2 cloves Garlic (I use the pre-chopped-in-a-jar when in a hurry)
    Pam olive oil spray - 2 seconds worth
    1 C. Shredded low-fat part-skim mozzarella

    Equipment needed:
    Med. to large Dutch oven (At least 4.5 quart)

Directions

Pre-heat oven to 375F.

Peel and chop garlic. Set aside.

Prepare a medium-large dutch oven by spraying the interior for two seconds with non-stick spray, and add the tablespoon of olive oil. Heat to a medium setting on the stovetop.

While the pot is heating, cut the chicken breast into strips.

Fry chicken, garlic, and salt until chicken has browned on all sides.

Dump the box of pasta into the pot, stir. Dump the Ragu into the pot, then fill the empty jar with water and dump that in, too. Stir well.

Put lid on Dutch oven, place in the 375F oven, and go work out for 45 minutes.

Remove lid, add cheese, and bake another few minutes until cheese has melted.

Remove from oven, and let rest for about 5 mins. while you set the table. Serve and enjoy!
