Introduction

i can up with this soup today as I wanted soup but not the same old thing, hope you all like it as much as we do. i can up with this soup today as I wanted soup but not the same old thing, hope you all like it as much as we do.
Number of Servings: 6

Ingredients

    2 tbps. olive oil
    2 chicken breast, boneless(about 6 oz. total)
    1 med. to lrg. carrot, cut up
    1 rib celery, cut up
    1 lrg. onion, rough chopped
    2 garlic cloves, minced
    salt,pepper, pepper flakes, oregano and basil to taste
    6 cups chicken broth
    1-14.5 oz can italian tomatoes
    2 cups (after soaking) great northern beans
    1 cup (dry) orecchieti pasta (or any small pasta)

Directions

in large sauce pot saute in hot oil the chicken (cut in bite size pieces), carrots, celery, onion, garlic and spices until meat is slightly browned and vegatables are fork tender. Add chicken broth, tomatoes and beans, bring to simmer and simmer until beans are tender (add water as needed). Bring up to boil and add pasta, cook until pasta is done.
