3 Tbl olive oil
2 chicken breasts, cut into 4 pieces
1/2 bottle of red wine
3 carrots, cut up in chunks
1 large shallot, chopped
1/2 tsp marjoram, thyme and rosemary
3 bay leaves
3 cloves of garlic, minced
2 cups mushrooms, quartered
1 cup low sodium chicken broth
Flour the chicken pieces and brown all sides in 2 tbl cooking oil. Remove from pan.
Add additional oil and saute shallots, carrots, garlic and mushrooms until mushrooms have released their liquid. Add the wine and the chicken broth, bring to simmer. Add chicken and simmer for 25-30 minutes (until chicken is cooked through) Serve with brown rice or pasta
