Venus de Milo Soup

Introduction

A light, clear broth soup packed with vegetables and fiber. A light, clear broth soup packed with vegetables and fiber.
Number of Servings: 10

Ingredients

    8 c. Water
    2 c. Crushed tomatoes
    1 envelope Lipton Onion Soup Mix
    1 10oz pkg froz mixed veggies
    1 lb lean ground beef
    1/2 c. orzo (uncooked)
    1 can (16 oz) kidney beans

Directions

Brown and drain ground beef. (Rinse to remove additional calories, if desired.) While beef is browning, mix water, tomatoes, & onion soup mix in a stock pot. Bring to boil and simmer for 20 mins. Add veggies, drained ground beef, orzo and kidney beans. Bring back to boil, and simmer 25-30 mins. Add salt/pepper to taste. Makes about 10 - 1 cup servings.
