Introduction

Ingredients

    2 t Butter
    2 c Mushrooms sliced
    2 T Shallots chopped
    1 clove Garlic
    1/2 c Swanson Chicken Broth 99% Fat Free
    1/4 c Sherry
    4 4oz Elk Steaks
    1/2 c Sour cream, fat free,
    Salt & Pepper to taste

Directions

In a non-stick pan: Saute Elk in 1 t butter (or olive oil) until golden on both sides-do not over cook. Meat should be pink in the center, remove to a plate and cover. Add 1 t butter (or olive oil) to the same pan and add mushrooms, shallots and cook about 3 minutes until soft. Add garlic, cook 1 minute. Add broth and sherry. Heat until bubbling. Finally add the sour cream and serve. 1 steak and about 1/4 c sauce. I like this dish served over a nice wide pasta.

  • Excellent!!! My kids loved it! I used Elk steaks, because, that's what I had on hand. Used yellow onion instead of shallots and reduced fat sour cream. I will definitely make this again. Thanks for the great recipe! - 7/16/07
