Soy Meatballs

Introduction

Chopping the fresh spices takes a lot of time in this recipe; I like to double the recipe and freeze half of the balls. Chopping the fresh spices takes a lot of time in this recipe; I like to double the recipe and freeze half of the balls.
Number of Servings: 1

Ingredients

    7 oz soy sausage (1/2 package of Gimme Lean)
    1 Tbsp fresh chopped Basil
    1 Tbsp fresh chopped Parsley
    1 or 2 cloves of garlic, minced
    1/2 cup bread crumbs
    1/4 tsp ground pepper
    2 Tbsp Parmesan Cheese

Directions

Mix all ingredients in a large bowl with your hands.
Divide into 12 equal sized balls.
Heat a lightly oiled pan on Medium-High.
Cook balls until evenly browned.

Lower heat and add sauce (plain tomato sauce, 1 Tbsp Basil, 1 or 2 garlic cloves) and simmer for 3 or 4 minutes.

Makes 2 servings.
