Golden Potato Grill

Introduction

Yukon Gold, Carrots and Asparagus Yukon Gold, Carrots and Asparagus
Number of Servings: 4

Ingredients

    3 medium potatoes
    1 large carrot (or more)
    20 spears of asparagus

Directions

Chop everything into bite size pieces. Cut 3 sets of double-layered foil, and oil with 1 tsp of EVOO on each. Layer the potatoes on the bottom, sprinkle with kosher salt & black pepper. Cover with the carrots and asparagus. Wrap tightly. Place on the top shelf of your grill while cooking your favorite main course. Done to perfection in 30 minutes!

  • This was delicious. Added whole, pealed cloved of garlic to it. Had rainy weather so i just baked it in the foil packet in the oven. 400 for about 45 minuted. Perfect! Will definately make again. - 5/17/10

  • I parboiled the potato and carrots for five minutes, put each vegetable in it's own packet, and added a little onion to the potato and red pepper flakes to all. I also used Voo w/ garlic to lightly oil the foil. Delish!!!! - 8/29/07

  • I guess I am very slow, because I am not getting the directions on this recipe and it sounds wonderful. Do you wind up using 3tsp of EVOO. Do you have 3 separate sheets of foil? Are the veggies on top of the potatoes with no foil? - 8/13/07
