Ingredients

Sesame seeds or tahini
2 Large eggplants
olive oil
garlic clovs
fresh parsley
Fresh lemon juice
Directions
This makes 4, 3/4 cup servings
Poke holes allover eggplants with a fork
Broil in oven or grill ona bbq, turning every 6-8 mminutes. You want these eggplants to wither and ooze, they will not look pretty, but they will be cooked through and soft.
When done, allow to cool.
Meanwhile, in a food processor,
put in your sesame seeds and run the processesor until they are a paste, add a bit of olive iol and 4 cloves of garlic, scrape sides, then run processor until everything is a wet paste.
Chop your parsley and set aside.
When eggplantsa re cool enough to handle, peel and mash the pulp.
Add sesame paste, olive oil, lemon juice and salt. mix together well.
Then stir in parsley. Taste and adjust salt if needed.
Serve room temperature on pitas, crackers or crusty bread.

I generally followed this recipe, though guessed about quantity of sesame seeds (put .25 cup in the food processor, and they did NOT turn into a paste, even w/ oil, until I added part of the eggplant, and even then they weren't smooth) My husband thought there was a bitter taste, but I didn't..OK - 3/13/10
