WW Lemon-Poppy Seed Crisps

Ingredients
* *Flour, white, .75 cup (remove)
* *Poppy seed, 1 tbsp (remove)
* *Can't believe its not butter (spray), 2 tbsp (remove)
* *Lemon Zest (Shredded Lemon Peel), 1 tsp (remove)
* Salt, 1 dash (remove)
* *Soy Milk Plain Light, .2 cup (remove)
* Granulated Sugar, .25 cup (remove)
Directions
Preheat oven to 350, spray a nonstick baking sheet with nonstick spray.
In a small bowl combine flower and poppy seeds.
In a large bowl, with an electric mixer on medium-high, beat sugar, lemon, butter, and salt until pale and fluffy. Turn it to low and alternately beat in the flour and milk until just combined. Gather the dough into a ball; wrap half in plastic wrap and place in fridge.
Roll out remaining dough between two sheets of wax paper forming a 6 inch circle. With a pastry wheel or pizza cutter cut into 16 equal wedges. With a spatula, transfer wedges to baking sheet. Bake until just golden at the edges, around 12 minutes. Let cool on sheet approx 5 minutes, then transfer to rack to cool completely.
Serves 8. 4 cookies= 1 serving
Note: If its hard for you to move the cookies, then put them in the fridge on the wax paper till they harden up a bit.
