3 Tbsp I can't believe its not butter 2 Med leeks cut into thin 1/2 moons 1 med yellow onion, thinly sliced 1 Tbsp salt & pepper 1 1/2 lb celery root, cut into 1/4" half moon slices 5 cups turkey stock or water
Melt butter, saute leeks & onions til soft (about 20 mins). Add celery root, 1/2 salt & pepper, and 1/2 cup stock. Cook until root is tender then add remainder of stock. Simmer 20 minutes. Let cool then puree. Best reheated after sitting in fridge overnight.
