Cubin Black Beans

Number of Servings: 9

Ingredients

    4 cans Low Sodium Black Beans, rinsed
    1 med-lg Onion, Chopped
    2-3 Green Bell Peppers, chopped/de-seeded
    2-3 Tbsp Ground Cumin
    2-3 Tbsp White Vinegar
    2 Bunches Cilantro
    1/2 Avocado
    1 oz Mozzarella, shredded

Directions

Place all ingredients, till Avocado, into a crock pot and just add enough water cover. Save some of the vegetables and cilantro for garnish. Cook on high for a few hours.

Serve over brown rice and garnish with fresh onion, bell pepper, cilantro, cheese, and avocado. Serve 8 not counting the rice.
