Beefy Lentil Vegetable Soup

Introduction

Number of Servings: 8

Ingredients

    1 lb lean ground beef
    1 1/2 c dry drown rice
    1 (I used 2) cups chopped carrots
    1 cup chopped onion
    1 cup chopped celery
    3 c water
    1 t salt
    pepper to taste
    2 cubes (or 2 tsp) beef bouillon
    6 cups tomato-vegetable juice cocktail
    1 4oz can mushrooms, drained
    1 dash worcestershire sauce

Directions

serves 8. Serving size approximately 1 1/2-2 cups.

Brown beef and drain. Place all ingredients in stock pot with lid, and bring to a boil. Reduce heat to low and simmer for 1 1/2 to 2 hours, or until rice and carrots are tender. Stir occasionally.

    This time that I made it I used brown rice instead of lentils - use 1 1/2 cups of dry lentils instead of the brown rice. I've made it that way several times - yummy!
