Best roast chicken ever!!!!!

Number of Servings: 4

Ingredients

    1 (3 to 31/2 lb.) chicken cut into quarters
    2 Tbs olive oil
    2 1/4 tsp salt
    13/4 tsp pepper
    1 lb. boiling potatos cut into 1 inch wedges
    1 lb zucchini cut lengthwise then in half
    1 medium onion cut in wedges
    1/2 cup low sodium chicken broth
    1 Tbs lemon juice

Directions

Preheat oven to 500 degrees
in a large bowl toss chicken with 1 Tbs oil 11/4 tsp salt and 1 tsp pepper. arrange chicken in large roasting pan so they do not touch, leaving a boarder of 2" around the edge of the pan

Toss potaots, zucchini and onion with remaining oil salt and pepper. Spread around the edges of the chicken. Stir the broth with the lemon and oour around the chicken and vegetables.

Roast, uncovered, until the chicken is pale golden and cooked through about 30 minutes

remove pan from oven and preheat broiler. Broil chicken and vegetables 3 inches from the heat until chicken is golden brown, about 6 minutes. Serve on a platter with pan juices.

Cooks note* Use a large roasting pan, 17 by 12 inches
