IntroductionMade this up in the kitchen because I just love pico de gallo. Can eat alone, with soup, with crackers, on bread, however you like it. Made this up in the kitchen because I just love pico de gallo. Can eat alone, with soup, with crackers, on bread, however you like it.
1/2 cup masned chickpeas
1/3 cup pico de gallo(recipe on this site)
1 T. Hellman's Lowfat Mayonnaise
1 T. spicy southwestern mustard(found at Walmart)
1 large hard boiled egg
1/2 cup celery
can add additonal spicy mustard 1-2 tsp. if feel too dry
1-4.5 oz. canned Premium chicken breast
Makes 2 cups.
1 cup equals: 199 calories, 5 g. fat, 19 g. carbs; 18 grams protein
2- Add pico, Mayo, diced celery. spicy mustard and mix.
3- Add diced large egg. Mix.
4- Add mashed chicken after draining liquid from can. Mix.
5- Add more spicy mustard if too dry for your taste.
