Italian Wedding Soup

Introduction

A cross between wedding soup and stracciatella. My grandma's recipe made slightly healthier with meatballs made from ground turkey breast and low-sodium broth. Number of Servings: 7

Ingredients

    -8 cups chicken broth or stock
    -About 3 dozen small, soup-sized turkey meatballs
    -10 oz. fresh spinach
    -6 oz. (dry) pasta, cooked very al dente, drained, and tossed with a tsp. of good olive oil.
    -A large handful (1/4 cup) of finely grated parmesan/romano cheese.
    -2 eggs, beaten.

Directions

Heat the stock to a rolling boil and then slowly drizzle in the beaten egg while whisking. Add the meatballs, cheese and spinach and simmer gently for 10 minutes. Add seasonings to taste. (I prefer coarse salt, black pepper, a bit of cayenne and some roasted, minced garlic). Add the pasta 5 minutes before serving.

Makes 7 generous bowls.
