Crustless Country Quiche

Introduction

Wonderful recipe for large family or frozen into servings for a quick microwaved meal. Excellent for Low Carb, Bariatric, or Athletes. Can be used for Vegans who'll eat dairy w/o the ham. Number of Servings: 12

Ingredients

    4 cups Egg substitutes (may use eggs 8-12 with yolks)
    1/2 cup 2% Milk
    1 T fresh chopped parsley (or 1 t dried)
    3/4 t ground black pepper
    1 cup diced bread of choice (I use plain stale white)
    1/2 cup shredded potato
    1/2 cup shredded lean Ham (opt or opt out for Vegan)
    1/2 cup Diced Onion
    1/2 cup Broccoli Florets (no stalks for Bariatric diet)
    (can substitute asperagus florets no stalks)
    1/2 cup Shredded Swiss Cheese (Alpine Lace is especially good)
    1/4 cup Diced Green or red peppers
    1/4 cup Parmesan Cheese shredded or Kraft

Directions

Serves 12
METHOD: Preheat oven to 350 F. In a mixing bowl combine eggs, milk, herbs, salt & pepper. In a seperate bowl combine all remaining ingredients and toss together blending well. Pour vegetable mixture into pan and then the egg mix. Bake for 20-30 minutes until a knife can be inserted and removed "clean".
Note: Other cheeses and herbs can be substituted to make whole new quiches so experiment.
