1 (15 oz) can black beans, rinsed and drained
1 (11 oz) can Mexican style corn
1 1/3 Cup avocado, peeled and chopped
1 Cup cucumber, seeded and chopped
1 Cup tomatoes, chopped
1/2 Cup green onion, thinly sliced
1 small jalapeno pepper, seeded and chopped
1 tsp lime juice
2 Tbs cider vinegar
1 Tbs olive oil
1 tsp ground cumin
1/2 tsp dried oregano
1/4 tsp salt
1/8 tsp black or white pepper
2. In a small bowl, whisk together dressing ingredients.
3. Pour dressing ingredients over salad, and toss to coat.
4. Cover and refrigerate for at least one hour prior to serving.
