Easy Peezy Red Pepper Soup

Ingredients

    2 Onions medium chopped
    2 Carrots chopped
    low sodium chicken broth, 6 cups
    White Wine 1/2 cup
    Potato 1 large chopped
    Thyme 3 tsp chopped
    3 cloves Garlic chopped
    2 jars of roasted red peppers
    Olive Oil, 3 tbsp

Directions

Add chopped onion, carrot, and garlic in olive oil. Saute until softened. Add chicken broth, wine, roasted red peppers, and potato. Bring to a boil then simmer semi covered for about 30 minutes or until potato is tender. Taste, add salt/pepper to taste, add thyme simmer for about 5 minutes more then serve.
