1 med. eggplant 1/2 cup Italian seasoned breadcrumbs 1/4 cup grated parmesan cheese 2 Tbsp. olive oil
Cut eggplant into 1/2 inch slices. Combine bread crumbs and parmesan cheese in shallow dish. Brush eggplant with olive oil, then dredge in bread crumb mixture. Place on baking sheet that has been sprayed with cooking spray. Bake in a pre-heated 450 degree oven for 15 minutes, turning once halfway through baking time, until golden brown. 4 2 slice servings
I've always loved fried eggplant but wanted a baked recipe instead. This was perfect and delicious! I've had my husband try many different eggplant recipes and he couldn't stand them. He actually really liked this!
