Cabbage salad with garbanzo bean vinaigrette

Ingredients

    2 c. green cabbage, sliced fine as if for slaw
    5 large raw baby carrots, sliced
    1/4 c. raw broccoli, chopped
    1 T good quality olive oil
    1 T white or red wine vinegar
    1 clove garlic, pressed or minced
    1/2 tsp. salt
    black or red pepper to taste
    1/4 c. canned garbanzo beans, rinsed

Directions

Scatter cabbage on a serving plate. Top with carrots and broccoli. In a small bowl, whisk olive oil, vinegar, garlic, salt, and pepper. Adjust seasonings to taste. Add garbanzo beans and toss until coated. Place bowl with beans into microwave and cook for 30 seconds to 1 minute until warm but not very hot. Drizzle garbanzos and vinaigrette over cabbage and serve.

Makes four 3/4 c. servings.
