Quick and Easy (Healthy) Tortilla Pie

Number of Servings: 4

Ingredients

    3 Tortillas (Mission 96% fat free, Heart Healthy Plus)
    1 can (10 - 12 oz), Canned Chicken
    8 oz (16 tbsp) of salsa (or half a jar)
    1 can (16 oz) fat free refried beans
    1 cup, Shredded Cheddar Cheese

Directions

This make 4 large servings (approx 425 calories, 50 carbs, 11 fat) or 8 small servings.

Needed:
Microwave and oven safe pie plate
Plastic wrap or glass lid for pie plate

Place 1 tortilla in bottom of pie plate. Heat for 10 seconds or until tortilla is warm and pliable. Press into the bottom of pie plate without tearing. Top with half Chicken, Beans, Cheese, and Salsa. Top with second tortilla. Repeat filling layer. Top with third tortilla. Wrap in plastic wrap or cover with lid.

Microwave for 8 minutes. Preheat broiler. Carefully remove all plastic wrap or lid. Place under broiler for 10 - 30 seconds.

Enjoy warm. Optional: Top with low fat sour cream, chopped tomatoes, or shredded lettuce.

This idea is also great with leftovers from other Mexican dinners. Try it with Taco filling, black beans, Spanish rice, cheese dip....the list is endless.
