Ingredients

    *Potato, raw, 5 large (3" to 4-1/4" dia.)
    Green Peppers (bell peppers), 1 cup, strips
    Leeks, 1 cup
    Red Ripe Tomatoes, 2 cup cherry tomatoes
    Chicken Breast, no skin, fried, 1 unit (yield from 1 lb ready-to-cook
    *Canola Oil, 1 cup
    Garlic, 1 tsp
    Ginger Root, 1 tsp
    Salt, 1 tsp

Directions

Peel, wash and cut potatoes into halves. Half boil the potatoes and then half pan fry the par-boiled potatoes in a skillet with oil till they get brown. Slice tomatoes into very small cubes. Cut chicken into small pieces. Put oil into a skillet and heat up. Add onions to brown. Add chicken, ginger and garlic to brown thoroughly while stirring. Make sure the garlic does not burn. Add tomatoes and let simmer and cook for atleast 7 minutes. Add leeks and stripped green peppers. Add potatoes into sauce and stir carefully without chipping on the potatoes
