Peanut butter soup

Introduction

An African recipe I learned from a friend from Sera Leon , West Africa. He made it with Pigs feet , I like it better with chicken. Can also be made with fish !

Is normally served over rice as more of a sauce then a soup.

When I make it for the family I omit the cayenne pepper and let people add their own at the table.

Ingredients



    * Eggplant, fresh, 1 eggplant,(yield from 1-1/4
    * Chicken Leg, 4 leg, skin removed
    * Peanut Butter, smooth style, .5 cup
    * Tomato Paste, 0.5 cup
    * Pepper, red or cayenne, 1 tbsp ( more if you like)
    * Salt, 1 tsp
    * Water, 5 cup

Directions

Makes about 10 one cup servings

1) peel and dice the eggplant into a large pot, add the water , diced onion, and chicken legs skinned and cut an 1/2 at the joint.

*at this point you will need to start cooking your rice to go with it. I use brown rice , it takes longer to cook but is so tasty !

2) Turn up the heat to a boil then to a simmer covered till chicken is completely cooked.

3) At this point the chicken can be removed and the meat removed and returned to the soup.

4) Add the peanut butter, tomato paste, salt, and cayenne pepper. Stir till dissolved and let cook at least 20 min. more.

Time to eat !
serve1 cup of soup over 1 cup brown rice.(rice NOT included in the calorie count)
