Introduction

Trying to satisfy my 6 year old's request for mac and cheese while simultaneously providing a healthy meal brought me to put a few recipes together to create this. High quality pasta will elevate this dish to be better appreciated by the foodies in the crowd. The best things about this dish is that you don't have to precook the pasta and it only uses one casserole dish and a blender! Ingredients

    2 cups uncooked whole wheat macaroni
    12 ounces silken tofu
    1 1/2 cups extra-sharp cheddar cheese
    2 Cups milk
    2 tsp paprika
    salt
    fresh ground black pepper

Directions

Preheat oven to 400 degrees. Use blender or food processor to smash tofu until smooth. Mix tofu and remaining ingredients in casserole dish. Cover and bake for 20 minutes. Stir, remove cover, and cook approximately 40 more minutes.
