Cheesy White Chicken Lasagne

Ingredients

    Chicken Breast, no skin, 600 grams (remove)
    10 Catelli Express Oven-Ready Lasagne Noodles, 170 gram(s)
    1 tbsp Butter, salted,
    2 tsp Garlic,
    1/2 cup all purpose flour
    1 tsp Salt,
    2 cup campbells' chicken broth in tetra pack,
    1.5 cup Milk, nonfat,
    1 tsp Oregano, ground,
    1 tsp Basil,
    5 tsp Pepper, black, .
    8 tbsp + 2 tbsp Silani Parmesan cheese
    1 cup Onions, raw, , chopped
    0.5 cup Spinach, frozen,
    2 cup Zucchini, , sliced
    1 cup Mushrooms, fresh,, pieces or slices
    1 cup,Carrots, raw, grated
    1 cup Peppers, sweet, red, fresh, , chopped
    2 cup Nordica Fat Free Cottage Cheese,
    2 cups Saputo part skim mozzarella



Directions

1.Line a cookie sheet with tinfoil and lightly spray with PAM. Place chicken on sheet and cover with another piece of foil. Bake at 400F for 45 minutes until cooked through. Chop into bite sized pieces. Set aside.
2.In a large fry pan place all vegetable and 2 tbsp water on med-high heat and cook until tender. Set aside
3. In large sauce pan melt butter over medium heat Add in garlic and then flour. slowly whisk in chicken stock to make a smooth sauce. Add in milk and herbs. when warm and thickening add in 8TBSP Parmesan cheese and 1 cup mozzarella. Set aside (off heat)
4.Spray a 9x13 glass pan with PAM. Place 1 cup of sauce into bottom and spread around. Layer 3-4 noodles 1/2 vegetable mix, 1 cup cottage cheese, and 1/2 of chicken. Pour 1 1/2 cups sauce over this and repeat vegetable, cheese, chicken and sauce layers. Place remaining noodles on top. Cover with remaining sauce, 1 cup mozzarella cheese and 2 TBSP Parmesan.
5.Place in 400F oven for45-60 minutes or until noodles are tender and top is golden and bubbly. You may need to cover with foil if top browns too quickly.
Serves 10 Serve with a large salad and garlic bread for wonderful meal.
