Mung Bean Thick Soup

Submitted by: SHELLYCHENG

Introduction

This can be used as a vegan recipe if you use veg. broth instead. Thick soup for a cold night. Mung beans are like lentils too for those that don't know. This is a very simple tasting meal with no overbearing herb flavors. You can doctor with sauces if you would like, but we like just a hearty warm bowl occasionally. Makes 4 quarts of soup.
