Rita's Chicken McAlester

Introduction

I didn't have tomatoes to make Chicken Laredo, so came up with a tasty alternative! I didn't have tomatoes to make Chicken Laredo, so came up with a tasty alternative!
Number of Servings: 4

Ingredients

    2 chicken breasts
    1 cup chopped white onion
    1 cup chopped green bell pepper
    1/4 cup chopped red bell pepper
    1 Tbsp corn starch
    8 oz fresh sliced mushrooms
    4 tsp chopped garlic (MOL to individual preference)
    1/4 tsp coarse black pepper
    1/4 tsp ground cayenne pepper (MOL to individual preference)
    3/4 cup low sodium chicken broth (I used Swansons)
    1/4 cup burgundy wine

Directions

Broil chicken breasts about 8-10 minutes each side.
In the meantime put onions, peppers and garlic in pan and sprinkle corn starch over all then saute until onions just turn translucent. Add black pepper, cayenne pepper, mushrooms and chicken broth. Cover and turn heat low about 15 minutes. Add wine.
Put chicken in pan, covering with veggies. Cover and simmer about 10 minutes.
Serves 4
Serving size = 1/2 chicken breast

I like this with brown rice on the side.
