Whole wheat pizza on the grill

Introduction

Ingredients

    1 loaf Rhodes Whole Wheat bread dough, thawed
    8 oz. part skim mozzarella cheese, shredded
    1/2 can sliced mushrooms, drained and rinsed
    1/2 cup chopped green peppers
    1 cup Ragu Pizza Sauce
    24 slices turkey pepperoni
    canola oil for grill grates

Directions

Preheat grill on medium (med-low if you use ceramic briquettes).

Saute green peppers in a pan sprayed with Pam until they soften. Set aside.

Separate thawed bread dough into 4 equal sections. Roll each section very thin, until approximately 9 inches in diameter. Repeat for each section until you have 4 thin crusts.

Brush oil on grill grates just prior to cooking the crusts.

Now the fun part...

Place crusts on hot oiled grill grates and close the grill. Check on crusts every few minutes by lifting the edge of each crust and examining the bottom. When the bottoms are nicely browned, flip each crust over and QUICKLY add sauce, cheese, pepperoni, peppers and mushrooms. If the bottoms of your pizzas are cooking too quickly during this step, turn the grill off. When toppings are in place, close the grill just until the cheese melts.

All grills are different, so you might need to do some trial and error until you get the perfect heat settings. Our first batch was a bit charred, but still very tasty. By the second batch, we had everything under control.

Makes 4 personal pizzas.
