Rumbamel's Crustless Spinach Kielbasa Quiche

Introduction

I saw a bacon tomato crustless quiche on Kraft website and got to thinking. My 5 yr. old daughter doesn't like bacon anymore, my 4 yr old son doesn't like tomatoes and I've been wanting to use spinach. So, here we are and YUM YUM YUM! Enjoy! Ingredients

    -12 large eggs
    -2 T Daisy Lite Sour cream
    -1 C six cheese italian shredded cheese lite Shop n Save's

    -1 C frozen chopped spinach (like Pictsweet)
    -1/2 C finely chopped onion (I used white)
    -1 C fresh mushrooms, chopped
    -7 oz or 1 link of Oscar Mayer Turkey Poska Kielbasa, chopped bit sized

    -1 C Sargento reduced sharp cheddar shredded cheese

Directions

-Chop the onions, mushrooms and meat. Mix the eggs and sour creamwith a whisk until well blended and then add the italian cheese and mix again. Saute the onions and mushrooms in a nonstick skillet until tender and then add the spinach. Saute until defrosted, then add the meat and mix well until warm and blended.

--Pour egg mix in a slightly sprayed 13x9 in glass casserole dish and then top (sprinkle evenly) with the meat mixture and then the last cup of cheddar cheese. Cook at 325 degrees for 30 minutes or until center is clean when a fork is stuck in it. Let set fot 5 minutes before serving.

--Makes 8 servings.
