Mediterranean lentil salad

Ingredients

1 large red pepper
1 large yellow pepper
1 cup red lentils
1 red onion, finely chopped
1 lebanese cucumber, chopped
dressing:
1/3 cup olive oil
2 tablespoons lemon juice
1 tsp ground cumin
2 garlic cloves, crushed
salt and pepper
Directions
slice peppers in half and clean them, grill them and let them cool. peel and slice. cook lentils and drain. mix everything but dressing ingrediants. to make dressing: whisk all dressing ingrediants togehter. pour dressing over salad, mix well. refridgerate for 4 hours.
