Fritata with Potato Crust

Ingredients

1 medium potato, sliced thinly
1/2 onion, chopped (about 1 cup onion)
6 slices soy bacon, chopped
1 jalapeno pepper, seeded and diced finely
1 cup chopped broccoli
1/4 cup shredded low fat cheddar or other cheese
EGG MIXTURE:
4 large egg whites
4 large eggs, whole
1/4 cup milk
2 tsp. dijon mustard
1 tsp. red pepper flakes
salt and pepper to taste
Directions
Preheat oven to 375F.
Coat a 9-inch pie plate with cooking spray. Arrange thinly sliced potato around the bottom of the pan until covered. Set aside.
Coat a nonstick skillet with cooking spray and heat over medium heat. Add chopped onions, peppers, and soy bacon. Saute until onion are translucent and soy bacon begins to crisp. Remove from heat and allow to cool while assembling the egg mixture.
In a medium bowl, combine eggs, egg whites, milk, and spices. Whisk until frothy. Add cheese, broccoli, and onion mixture and stir. Pour egg mixture over the potato slices and allow to settle into all crevices.
Bake uncovered at 375F for 30 minutes or until set. Serves 4.
