Chicken Breast wellington

Number of Servings: 4

Ingredients

    2 5 oz chicken breasts
    1 (8 ct) can reduced fat crecent dinner rolls
    4 slices reduced fat provolone cheese
    Spicy mustard to taste
    1 egg, beaten (use less than half)

Directions

Preheat oven to 350 degrees

Rinse chicken and place in a heavy sauce pan. Add enough water to cover. Simmer for 30 minutes and drain.

Let the chicken cool; remove skin and bones, cut chicken breasts into halves.

Unroll the crescent roll dough on a pastry board. Make 4 squares by pressing the perforations to seal. Place 1 chicken breast half on each square. Top with cheese, and spicy mustard. Wrap dough to enclose filling. Brush with egg. Place on baking sheet.

Bake 20-25 minutes or until light brown.
