Greek Omelet

Ingredients

    3/4 cup (packed) fresh spinach
    6 large eggs
    3/4 cup crumbled feta cheese
    3 tablespoons chopped onions
    3 teaspoons dried dill (3 tablespoons fresh dill)
    salt and pepper to taste
    olive oil spray for muffin pan

Directions

Preheat oven at 350*. Cut up fresh spinach and place in microwave bowl with onion. Zap for 1 minute on high.. Add remaining ingredients. Mix well. Spray olive oil into muffin pan need one for 6. The divide mixture evenly. Bake for 25 minutes. Knife inserted in center should come out clean. Let set 5 minutes then enjoy. Makes 6 muffin size omelets.
