Double Chocolate Cranberry High Fiber Cookies

Introduction

These cookies are delicious, easy to make and are high in fiber. These cookies are delicious, easy to make and are high in fiber.

Ingredients

    1/4 C butter
    3/4 C unsweetened applesauce
    3/4 packed brown sugar
    1/3 cup non-caloric sweeteneer (Splenda, Truvia, Ideal)
    2 eggs
    1 C whole wheat flour
    1/2 C unsweetened baking cocoa
    1 tsp baking soda
    1/4 tsp salt
    1 C Fiber One original bran cereal
    1 1/2 C old-fashioned oats
    3/4 C vanilla baking chips
    1/2 C Craisins

Directions

1. Heat oven to 350 degrees. In large bowl, stir together butter, applesauce, brown sugar, sweetener and eggs. In small bowl, stir together flour, cocoa, baking soda and salt: stir into butter mixture.


2. Stir in cereal, oats, craisins and baking chips. Onto ungreased cookie sheet, drop dough by heaping tablespoonfuls 2 inches apart.


3. Bake 9 minutes. Cool 1 to 2 minutes: remove from cookie sheet to cooling rack. Cookies will stick slightly because they are low in fat, but will release more easily when slightly cooled. When completely cool, store in a tightly covered container.


Yields 3 1/2 dozen cookies.
