Southern White Beans

Introduction

Great as a meal with rice or as a side dish to oven fried fish. Great as a meal with rice or as a side dish to oven fried fish.

Ingredients

    2 lb Great Northern Beans
    1.25 lb. ham shank, pickled pork or ham hock (not sweet ham)
    8-10 cups water
    2 cups chopped onion
    1 toe garlic, or about 5 cloves
    1 cup chopped celery
    1 medium green bell pepper
    2 tablespoons chopped parsley
    1 (8 oz) ham steak chopped
    Salt to taste, about 1.5 tablespoon
    Pepper to taste, about 1 tablespoon (less if desired)

Directions

Soak beans overnight in water. Saute onion and other vegetables in pot. Add beans and 6 cups water. Cook for about 1-1.5 hours until done.

Serve over brown rice. (not included)

This recipe can easily be halved to cook only 1 lb beans, but it freezes well, so I tend to make it in big batches and divide up into containers and freeze for later.
