Chicken Fried Rice

Ingredients

3/4 cup brown rice (4 servings, I use Uncle Bens)
1 pk oxo low-sodium chicken broth
1 1/2 tbsp extra virgin olive oil, divided
8 oz chicken breast, skinless and boneless, chopped
1 medium onion, chopped
Pepper, to taste
2 large eggs
1 cup frozen peas
2 tbsp. soy sauce, divided
Directions
Cook rice according to pk directions but add oxo pk to warm water for cooking rice.
Meanwhile, heat 1 tbsp oil in large fry pan. Add chopped chicken and onion. Sprinkle with pepper. Fry on med-high until chicken is browned and onion is softened.
Push chicken and onion to one side of pan. Add remaining 1/2 tbsp oil to empty side of pan and then add eggs. Scramble until cooked. Mix cooked eggs with chicken and onions in pan. Add 1 tbsp soy sauce. Mix.
Add cooked rice and frozen peas to fry pan. Sprinkle with remaining 1 tbsp soy sauce. Stir. Cover and heat until peas are heated. Stir and serve.
