Zucchini Casserole

Introduction

Ingredients

    Roughly 3 Medium Zucchini
    1 C. Lowfat cottage cheese
    1 Fresh Egg
    1/2 tsp Garlic Powder (0r fresh garlic!)
    2 slices crumbled cooked bacon (for topping)
    1 C. Lean Cubed Ham
    Parmesan Cheese for topping
    1/4 C. Shredded Cheddar Cheese
    1. Tbsp Flour (for thickening)

Directions

Pre Heat oven to 350~
Slice Zucchinini in thin discs. Place in microwaveable bowl with roughly 2 tbsp of water, cover tightly with saran wrap and microwave for roughly 4-5 minutes. While Zucchini is cooking, in a separate mixing bowl, mix together the cottage cheese, cheddar cheese, ham, flour and garlic powder. When Zucchini is done cooking, drain off water and gently press down on zucchini to release the extra water.
Place a layer of zucchini in a casserole dish, top with cottage cheese mixture, place another layer of zucchini and another layer of cottage cheese mixture.
sprinkle the top with crumbled bacon and parmesan cheese (I added a dash of Paprika for extra color!)
Bake for roughly 45 minutes and let sit on the kitchen counter for about 10 minutes prior to serving to allow your casserole to set up.
